Lee H. Baxter
Lee H. Baxter, 85, of Floyd, passed away happily at her home on December 16, 2021. Lee is at peace knowing she will finally be reunited with her husband Bob who predeceased her. She was born on May 5, 1936, in Pyong Ahn Pukto, Korea, a daughter of the late YI Kyong Son and Pak Ssi. On October 16, 1962, she was united in marriage to Wallace R. Baxter in a ceremony which took place in Seoul, Korea. For over 30 years, Lee was employed by Friendly’s Restaurant of Rome. She was a talented Chef, who was always willing to prepare special meals for her customers. Lee however would respectfully decline any orders for poached eggs. In her spare time Lee would travel to various casinos gaming and playing bingo.
She is survived by her extended family, May and Chin Fu Lee of Rome, Amy Lee Pontes and her children, Kira and Jakob, Boston, Nancy and David Johnson, Rome, Denise and Jay Huggins, New Hartford, and their son Josuha Huggins of Troy. Lee also considered all her coworkers from Friendly’s as her family. The President of Friendly’s Corporation was so impressed by Lee, that he would make it a point to visit the Rome store just to visit with her.
A celebration of Life will be held on Wednesday, December 22, 2021, at 2 P.M. at Strong-Burns & Sprock Funeral Home 7751 Merrick Road, Rome. Interment will take place in Rome Cemetery.
